    The 1995 Cabernet Sauvignon Hillside Select possesses lots of fatness in the mid-palate. There is plenty of tannin in this full-bodied, rich effort. It is remarkable how the finest California Cabernets combine extraordinary power and richness with balance and elegance. A stupendous wine, it is worth a special effort to obtain.     Since 1991, Shafer's Hillside Select Cabernet Sauvignon has unquestionably been one of the top dozen or so California Cabernets. Made from 100% Cabernet Sauvignon and aged 32 months in 100% French oak casks (the majority Taransaud), it possesses the elegance and finesse one would expect from the Stags Leap area, but also monumental power, richness, and intensity. The 1996 Cabernet Sauvignon Hillside Select is one of the vintage's super-stars. Its opaque purple color is accompanied by super aromatics, immense body, great fruit extraction, superb purity and overall symmetry, as well as a 40+ second finish. Revealing exceptional intensity (but no heaviness) as well as perfectly integrated acidity, tannin, and alcohol, this fabulous Cabernet will drink wonderfully for three decades.

    The 2003 is a singular style of wine, but by no means wimpy or undernourished. The 2003 Shafer Cabernet Sauvignon Hillside Select has a dense, purple color, notes of creosote, graphite, blackberry and cassis fruit, charcoal and scorched earth. It has a full-bodied mouthfeel and excellent purity, while some rather noticeable tannins kick in on the finish. This wine seems to be moving from adolescence to that early mature stage, where I would expect it to hold for at least another 10-15 or more years. Clearly not one of the superstars in what was a rather astonishing qualitative lineup, but it’s outrageously good Cabernet Sauvignon, and I expect myself, as well as any of my readers, would drink this 24/7.

    Shafer’s Hillside Estate Vineyard consists of 54 acres all on steep, amphitheater-like, rocky outcroppings and knolls. It receives the full benefit of southeasterly sunlight, and enjoys the afternoon breezes that blow up from the San Francisco Bay channel. An unusual geographic feature, this vineyard is basically a box canyon. The top soil is virtually non-existent as the bed roots that go into the white tofu volcanic soil base rarely extend more than 18 inches before hitting bedrock. This no doubt is a significant reason for the intense flavors achieved by the Hillside Select Cabernet Sauvignon, and why it is able to spend 32 months in 100% new French oak without a woody taste.

  • There are 860 cases of the 2003 Papa, a blend of 97% Syrah, 2% Mourvedre, and 1% Grenache sourced from six different vineyards. An old black and white photograph of Manfred Krankl’s father holding a baby with a head the size of a large watermelon (presumably Manfred) serves as the label for this wine, which has just about everything one could want in a great Syrah. It exhibits extraordinary power and richness along with large quantities of sexy, seductive cassis, black cherries, and a chocolaty undertone. Unctuously textured, rich, and full, it will provide amazing drinking over the next 10-15 years.

    The 2013 Proprietary Red displays a deep garnet-purple color. Wow—it emits the most gorgeous perfume of rose hip tea, violets, sandalwood and fragrant earth over a cassis and blackberry pie core with touches of mocha, cigar box, menthol and garrigue plus a waft of star anise. The powerful, full-bodied palate delivers a wall of exotic spice-accented black fruit preserves with a rock-solid frame of grainy tannins and wonderful freshness, finishing very long and layered. This needs time but is lookin’ glorious.

    Deep garnet-purple colored, the 2014 Proprietary Red needs a little coaxing to reveal slowly unfurling notions of warm black cherries, mulberries, redcurrants and blackberry compote with touches of licorice, tapenade, chargrill and scorched earth. Full-bodied, firm, grainy and packed with layers of black fruits and savory flavors, it has a firm, grainy backbone of very ripe tannins and tons of vivacity, finishing very long.
